James served his apprenticeship to engineering and worked in manufacturing and construction up to the early 70s. Went into the family historical occupation of shrimp fishing and later began to produce potted shrimps forming the business Southport Potted Shrimps in 1982.

In recent years James has built up an experience of speciality foods.
